Carrot Pickle Ingredients
- Carrots – 500 grams (cut in long thin sticks)
- Mustard oil – 4 tablespoons
- Rye (mustard seeds) – 2 teaspoons
- Fenugreek seeds – 1 tsp
- Asafoetida – 1 pinch
- Turmeric powder – 1 tsp
- Red chili powder – 2 teaspoons (as per taste)
- Salt – 2 teaspoons (or by taste)
- Vinegar – 2 tablespoons

Carrot Pickle Method (Punjabi Carrot Pickle Method)
Carrot preparation: Wash and peel the carrots thoroughly. Cut into a long-and-long stick or desired shape. Keep in mind that carrots are completely dry, otherwise the pickle may deteriorate quickly.
Fry spices: Put mustard oil in a pan and heat it well (until light smoke comes out). Slow the gas and add mustard seeds and fenugreek seeds. Now add asafetida to it and fry for 5-10 seconds.
Pickle Tadka: Add turmeric and red chili powder to the oil and mix immediately. Now add chopped carrots and mix well. Add salt on top and stir for 2 minutes.

Instant Flavor: Turn off the gas and add vinegar and mix well. Vinegar makes this pickle longable and sour-testi. To enhance the taste, you can also add a little green chili or ginger julien.
Ready to serve: Your carrot instant Punjabi pickle is ready. You can immediately eat it with parathas, roti or dal-rice. Always remove the pickle from dry utensils and spoon. Fill it in airtight glass jar and keep it in the fridge, it will run easily for 7–10 days.
