The traditional dishes made in Indian kitchen are not only full of taste, but also contain a lot of nutrition along with love. You just need to know how to use the ingredients in a balanced manner. In winter season you can make Gond Pak which is very beneficial for your health. Gum is a good source of calcium and has been used in Indian food since ancient times. This time you should prepare gum pak and eat it. Apart from being tasty, it is also rich in many nutrients because dry fruits, milk and ghee are used in Gond Pak.
Gond Pak is a sweet, but you should not eat a lot of it at once, rather you can take 1 or 2 spoons daily according to your age. In this way, it provides a lot of benefits for your health. You can also make barfi by setting Gond Pak, from which you can eat one piece daily or you can store it in a metal tiffin and eat it by the spoonful. So let’s see the recipe of Gond Pak.
Note the ingredients
You will need half cup gum, two cups milk, 1 cup mixed dry fruits like walnuts, cashews, almonds, makhana and pistachios, half cup coconut (finely grated), one fourth cup poppy seeds, 1 tablespoon dry ginger powder, half teaspoon nutmeg powder, 1 teaspoon green cardamom powder. Half cup desi ghee. Now let us know the method of making Gond Pak.
How to make gond pak?
- First of all, you have to grind all the gum in a mixer grinder and prepare a fine powder from it.
- Now heat ghee in a pan and roast almonds, walnuts, cashew nuts and makhana in it on low flame. If you want, you can add some more nuts also.
- Grind the roasted nuts also. Keep it slightly coarse. This gives a nice granular texture to the gond-pak.
- Take out all the nuts in a plate and again heat two spoons of desi ghee in the pan. Add coconut powder and poppy seeds to it.
- Fry coconut and poppy seeds on medium to low flame for 3-4 minutes. Keep stirring it continuously and when it becomes light golden, take it out in a plate.

Now you have to put two to three tablespoons of desi ghee in the pan and then add gum powder to it. Fry it on low flame for two to three minutes and mix all the gum well.- When the gum is ready after roasting, add two cups of milk in it. It should be pre-boiled and cooled to room temperature. Both these things have to be cooked for 8 to 10 minutes.
- When the milk and gum gets cooked and thickens, add the roasted poppy seeds and coconut and mix them and also add the dry fruit powder.
- Jaggery is to be used for sweetness, so either take its powder or grate it so that it does not form lumps when it melts.
- After mixing jaggery in gond-pak, it has to be cooked while stirring continuously till it melts and releases ghee so that it does not stick to the pan.
- Now add dry ginger powder, cardamom powder and nutmeg powder last and mix. In this way your gum paste will be ready.
Gum Pak has many benefits
This gum pak will give warmth to the body and will also boost your immunity. With this you get many vitamins and minerals as well as Omega 3, due to which it is considered beneficial for the brain. Calcium is also available in good quantity, hence it strengthens the bones and prevents joint pain in winter. You can prepare Gond Pak and store it and eat 1-2 spoons of it daily.
