Akki Roti recipe: How to make traditional Karnataka-style flatbread

New Delhi: Akki Roti is a Karnataka-style rice flour flatbread that is both healthy and tasty. The name “Akki” refers to rice in Kannada. Apart from the regular wheat rotis, Akki Roti is prepared from rice flour, finely chopped onions, green chillies, fresh coriander, and grated vegetables such as carrots or cucumber, which can be added for extra softness and nutrition. The dough can be flattened by hand on the banana leaf or butter paper before being cooked on the tawa. The roti, when prepared, is crispy and soft, slightly chewy, that can be perfectly paired with coconut chutney, peanut chutney, or a spicy curry.

How to make Akki roti ?

Ingredients: Serves 4-5 rotis

  • 1 cup rice flour
  • ½ cup finely chopped onions
  • 2 green chillies, finely chopped
  • 2 tbsp grated coconut (optional)
  • 2 tbsp chopped coriander leaves
  • A few curry leaves, chopped
  • ½ tsp cumin seeds
  • ½ cup grated carrots or cucumber (optional, for extra softness)
  • Salt to taste
  • Water to knead the dough
  • Oil or ghee for cooking

Instructions:

  1. Take a bowl and mix rice flour, onions, green chilies, grated coconut, vegetables, coriander, curry leaves and cumin seeds.
  2. Add salt to this and mix well.
  3. Slowly add water and knead it to make soft dough.
  4. Take a banana leaf, butter paper, or even a clean cloth would do.
  5. Grease it lightly with ghee or oil and place a small portion of dough on it.
  6. Wet your fingers with water and gently flatten the dough to make a thin circular roti shape.
  7. If using a tawa directly, grease it well and shape the roti on the cold tawa itself.
  8. Heat the tawa and place the roti on it.
  9. Cook it evenly on medium flame for around 2-3 minutes and add a little oil or ghee around the edges.
  10. Flip on both sides and cook until golden brown and crispy.

The roti can be made without fermentation or rolling. It is an easy option to make for the regular rotis. Serve the prepared hot with coconut chutney, peanut chutney, or tomato chutney and enjoy with a dab of butter or ghee for extra taste.
