Dubai Famous Kunafa Recipe
Ingredients for Kunafa Base
250 grams Kunafa vermicelli (Kunafa dough / Kataifi)
100-120 grams melted butter
2 tbsp powdered sugar (optional)
Ingredients for Filling
200 grams mozzarella cheese (grated)
100 grams ricotta cheese or cream
2 tbsp condensed milk (for mild sweetness)
For sugar syrup
1 cup sugar
½ cup water
1 tsp lemon juice
½ tsp rose water or kewra water

How to make Kunafa
To make Kunafa, first prepare the syrup. For this, put sugar and water in a pan and boil it on medium flame. After 5 to 7 minutes add lemon juice and rose water to it. When the syrup becomes slightly sticky, take it off. Now keep it aside to cool.
Now you have to prepare the base of Kunafa. For this, break the Kunafa Vermicelli lightly with your hands. Now take a pan and add some butter in it. After this, add vermicelli and roast it. When it turns golden brown, take it out.
Now it is the turn to make layers. Grease a round baking tray with ghee/butter. Press half of the Kunafa vermicelli in the tray and spread it evenly. Spread a layer of mozzarella and ricotta cheese on it. Now put the remaining Kunafa vermicelli on top and press it lightly.
Preheat the oven to 180°C. Bake the Kunafa for 25–30 minutes until it turns golden brown on top. If you don’t have an oven, you can cover it in a heavy bottomed pan and cook it on low flame. Turn the hot Kunafa onto a plate. Pour cold syrup evenly over it. Garnish with chopped pistachios.
