You will need 1/2 cup gram (small size), 8-10 slices of dried gooseberry, 2-3 bay leaves, 1 tablespoon whole coriander, 3-4 cloves, 1 large cardamom, 1 teaspoon cumin, 3-4 green cardamom, 1 teaspoon whole black pepper, 1 small piece cardamom, 2 teaspoon pomegranate seeds, 2 medium sized tomatoes, 2 medium sized Onions, 2-3 teaspoons Chole Masala, 2 teaspoons red chili powder, 1 teaspoon coriander powder, salt as per taste, a little rock salt, green coriander to garnish.
Masala Chole Recipe
- You have to soak chickpeas in water overnight or for a few hours so that they swell properly. Add sweet soda in it.
- Take out the chickpeas from the water and put them in the pressure cooker. Now add clean water to it and also add dried Amla pieces. Cook it till it melts.
- Add dry coriander, bay leaves, cloves, black cardamom, cumin, green cardamom, black pepper and cinnamon in a pan and roast on low flame.
- Add pomegranate seeds to the spices and fry it lightly. Keep in mind that anardan should be added later, because if it is roasted too much it becomes bitter.
- Now prepare fresh masala by putting all the spices in the grinder. While grinding the masala, you have to add some dry ginger to it also.
- You have to wash tomatoes and onions and remove moisture and then fry them well on flame, so that their peels get burnt.
- Now remove the peels of prepared onion and tomato and then grind it in a grinder and make its puree. In this you also have to grind garlic and ginger.
- Check that your chickpeas are cooked, then open the lid and add prepared tomato, onion, garlic and ginger masala in it.
- Now add red chilli powder, coriander powder and also add the fresh chickpea masala prepared by grinding it.
- You have to add a little more water to the chickpeas as per requirement and then add salt to it. After this mix well.
- Now cover and cook the chickpeas, but do not close the lid. Your spicy thick chickpeas will be ready in 10 to 15 minutes.
- Add green coriander leaves to chole masala. Enjoy hot, oil-free, tasty Masala Chole.
