If pickles are made at home, they are exposed to sunlight occasionally. Kept away from moisture to maintain its shelf life. For this, more and more people use lemon juice, but to increase the shelf life of pickles in the market, preservatives like sodium benzoate are used. These are used to prevent mold in pickles. This can cause many side effects like stomach ache, vomiting, skin rashes, etc.
