Parda Biryani is very special and different. What makes it special is not its spices or taste but the way of cooking and serving. Generally, biryani is cooked either by simmering it in a big pot or in a normal manner. For serving, biryani is also served on a plate. While cooking biryani, open the lid again and again to check whether the water is okay or not, whether the rice is cooked or not, whether the taste is right or not. But nothing like this happens in Parda Biryani. The lid of this biryani is never opened during the entire cooking time so that all the aroma, moisture and taste get mixed together inside.

300 grams flour 4 teaspoon ghee 1/2 teaspoon salt 1/2 teaspoon baking soda Water as required
Ingredients for Biryani
500 grams chicken/mutton 2 cups basmati rice 50 grams ghee 1 teaspoon ginger and garlic paste 1 onion 2 tomatoes 1/2 cup curd Salt to taste 1 teaspoon turmeric 1 teaspoon red chili 3 green chilies 2 teaspoons Khada Garam Masala 3 teaspoons biryani masala 1/4 cup coriander mint leaves
Method to make Purda Biryani
Prepare the curtain- Put flour in a vessel and add soda, salt and ghee in it and knead it. Now let this dough rest for half an hour.
How to make biryani- To make biryani, add oil to the cooker. Add chopped onion, chopped green chillies and all the spices in it. Now add chicken to it. Add salt, red chilli, chicken masala, biryani masala, turmeric, garam masala, Kashmiri red chilli and ginger-garlic paste and fry well. When the chicken leaves the oil, add curd and cream to it and whistle for 2 whistles.
Now take a vessel and fill it with water. Grind it and add rice and cook it till 80 percent. When the rice is cooked, grind it and keep the rice aside. Take a vessel and mix the biryani rice and chicken in layers in it.
Now roll out a thick roti from the flour that was kneaded. Take a round flat vessel and place the roti on it. After this, put biryani inside it and close it like a bundle. Now put the bundle back in the microwave. If you don’t have an oven, you can add salt to the cooker and bake it in that too. Serve after it turns golden brown.
