What ingredients will be required?

To make plum cake, take 50 grams of tutti-frutti, 20 to 25 grams of dry blueberries, 50-50 grams of three different types of raisins, 1/4th cup of sugar and the same amount of jaggery powder. Orange juice (take so much that all the dry fruits get immersed in it), 140 grams of flour. One-fourth teaspoon salt, half teaspoon cinnamon powder, one-fourth teaspoon clove powder, one-fourth teaspoon nutmeg powder, half teaspoon dry ginger powder, half teaspoon baking powder, two pinches of baking soda. You will need 100 grams of butter, 140 grams of full cream milk, 5 ml of vanilla essence, one-fourth of the peel of an orange, and the peel of half a lemon.

How to make Plum Cake

  • Put a pan on the gas. Add sugar to it and caramelize it. Therefore keep the flame very low. Stir the sugar continuously.
  • When the sugar melts and it starts looking like caramel, add jaggery to it and cook till it melts. If its color starts changing, turn off the gas.
  • Add water to the mixture of jaggery and sugar and make it a slurry. After this, turn on the gas again and cook it until it becomes slightly thick. When it cools, it becomes quite thick, which is necessary.
  • Now take a big sized bowl and sift the flour in it and also sift all the other spices like black pepper, cinnamon, clove powder, etc. and keep it aside.
  • Now heat a pan and melt butter on medium flame. Add orange juice, sugar and jaggery mixture to it and cook. Turn off the gas once it starts boiling.
  • When the prepared solution cools down, add dry fruits soaked in orange juice and milk along with vanilla essence and mix everything well.
  • Now add this mixture to the sifted flour and mix it well. If you find the consistency of this batter too thick then add orange juice left over from dry fruits.
  • Add a finely grated piece of orange peel to the batter and also add lemon juice. Now it is ready for baking.
  • Take a cake loaf tin, line it with butter paper and then put the batter in it and pat it lightly so that air pockets are not formed.
  • Garnish the batter with dried cranberries, almonds and some tutti-frutti. Bake it in a preheated oven at 150 degrees Celsius for 1 hour.
