This cake requires neither an oven nor any special baking skills. This cake, which sets in the fridge, tastes just as rich and fruity as a traditional Christmas cake. The combination of dry fruits, aromatic spices and mild sweetness gives it a festive feel in every bite. The best part is that it can be prepared in advance, so you don’t have to worry about a thing on the day of the party.
Ingredients for No Bake Christmas Cake
(for a small 15 cm cake)
- 60 grams chopped prunes
- 60 grams chopped mixed candied peel
- 75 grams raisins
- 75 grams sultana
- 75 grams glace cherries (cut into halves or quarters)
- ½ tsp cinnamon powder
- ½ tsp mix masala
- ½ tsp grated nutmeg
- 1 tsp vanilla extract
- 1 tbsp liquid sweetener (honey/maple syrup/jaggery syrup)
- 80 grams unsalted butter
- 75 ml rum/brandy/sherry (or fruit juice for children)
- 75 grams chopped walnuts
- 250 grams finely crushed biscuits (rich tea biscuits are best)

Step 1: Cook the Fruit
Mix all the dried fruits, spices, vanilla, sweetener, butter and alcohol (or juice) in a pan. Heat over low heat until butter melts and fruits soften. Now let this mixture cool for 30-60 minutes.

Step 2: Prepare the Cake Mix
Add chopped walnuts and crushed biscuits to the cooled fruit mixture and mix well. The mixture should be slightly moist and sticky.
Step 3: Set up and decorate
Pour the mixture into a cake tin lined with cling film or parchment paper and press well. Cover and let set in the refrigerator at least overnight. Dust with icing sugar or garnish with almond paste before serving.
