If you have the right technique, right temperature and smartness, then you too can easily make perfect corn roti at home without it breaking.
How to roll corn bread without tearing? (Soft Corn Bread Tips)
1. Always knead the dough with warm water.
- Corn flour does not contain gluten, so when kneaded with boiling or very hot water, the dough binds immediately.
- As soon as you knead the dough, do not forget to cover it and keep it aside for 10 minutes.
- The hotter the water, the better the binding of the corn flour.
2. Add some wheat flour or rice flour
- If the roti is tearing frequently, add 1-2 teaspoons of wheat flour to it.
- This kneads the dough and will enable you to roll the roti easily.
- If you want to keep it gluten-free, add 1 teaspoon rice flour.
3. Use plastic/butter paper for rolling
- Corn bread is made more easily with hand and plastic sheet than directly with a rolling pin.
- Place the dough between two butter paper/plastic sheets and spread it by patting it.
- This makes the roti circular and without tearing.
4. Always keep the dough soft
- If the dough is dry or tight then the roti will burst.
- The softer the flour, the thinner and softer the roti will be.
- If necessary, wet your hands and knead the dough for a while.
5. The pan should be completely hot.
- Cold pan makes the roti dry and the edges crack.
- Place the pan on medium-high flame and heat it.
- If the roti rises a little immediately after adding it, then it is the right temperature.
