Moong dal is the best source of protein. About 23-24 grams of protein is found in 100 grams of moong dal, which is good enough to meet the daily value. Apart from this, fiber, vitamins (B-complex, C) and minerals like iron, calcium, magnesium, potassium are also found in moong dal. When you add nuts and jaggery to this high protein dal to make chikki, its nutritional value further increases.
Recipe to make Moong Dal Chikki
Material
Moong dal (washed yellow) 1 cup
Jaggery ¾ cup (as per taste)
Ghee 12 spoons
Cardamom powder ½ tsp
Small pieces of cashews/almonds 23 spoons (optional)
water 23 spoons
How to Make Moong Dal Chikki
First of all, wash the moong dal, dry it and fry it in a pan until it becomes light golden. When a light aroma starts coming out, turn off the gas. Cool it and make a coarse powder in a mixer. Now make jaggery syrup for this. For this, heat 1-2 spoons of ghee in a pan and add jaggery with 2-3 drops of water. When the jaggery starts boiling and becomes a little sticky, pour some syrup into the water to check it. If it becomes a little hard then the syrup is ready.
Now slow down the gas and add ground moong dal powder to the jaggery syrup. Mix cardamom powder, cashew nuts and almonds with it. Mix everything well and cook until the mixture thickens. Now apply some ghee on a plate and grease it. Pour the mixture into a plate and spread it evenly with a spoon or rolling pin. Let it cool slightly for 10-15 minutes. When it becomes a little hard, use a knife to cut bars or pieces of the size of your choice. When the chikki cools completely, it will become crispy. You can store it comfortably for 15-20 days by filling it in an airtight container.
