This is how Kashmiri walnut chutney is made
There is a kind of Kashmiri chutney, which is made from walnuts. To make this, firstly the walnuts are lightly roasted or ground coarsely without roasting. Then fresh curd, green chillies, garlic, Kashmiri red chilli powder, salt and a little cumin are added to it and blended well. The consistency of the chutney is kept neither too thin nor too thick. Black Gram Shikhampuri Recipe
Shikhampuri comes from the royal kitchen of Hyderabadi, where kebabs are filled with creamy stuffing. Actually, it is usually made from meat. But to make it vegetarian, black gram has been used. A flour-like dough is made by grinding boiled black gram with spices (green chilli, ginger-garlic, garam masala). Then a soft stuffing of curd + cheese + mint or cheese is filled in the middle. Crispy on the outside and soft on the inside, these kebabs are very tasty.

Jhol momos were also prepared for Putin. These are steamed momos, which are dipped in a special spicy gravy. Gravy is prepared from tomatoes, sesame seeds, peanuts and garlic. After this, the marinated paneer is put on the skewer and cooked in the grill or tandoor until it turns golden. You can also make it at home by shallow frying it on a pan. The prepared paneer is placed in a thin parantha or roomali roti and made into a tight roll with a light layer of onion, chaat masala and mint-mayo.

To make this, first wash the spinach and fenugreek thoroughly, chop them, blanch them in boiling water, cool them and grind them coarsely. Add pureed spinach-fenugreek mixture and boiled peas to it and boil on low flame. Lastly add some cream or corn flour. This further increases the consistency and taste.

Easy Tandoori Stuffed Potato Recipe
For this, take a medium sized potato, make a cut in it and boil it. After this, prepare a mixture by adding cheese, chopped capsicum, mint, chaat masala, Kashmiri red chilli and salt and fill it. In a separate bowl, prepare a light marinade by mixing curd, ginger-garlic paste, tandoori masala, some lemon juice and oil and coat the potatoes well in it. After this, cook them in oven, air fryer or pan on low flame till they turn golden.

How to make pickled brinjal?
This was also kept in the menu for Putin, the taste of which was very much liked by the Russian guests. Its spicy stuffing and spicy taste is very delicious. To make this, wash the brinjal, make long cuts, apply a little salt and fry in a little oil until it turns golden. On the other hand, heat oil in a pan and add nigella, fenugreek seeds, fennel, mustard seeds and asafoetida. This gives pickle flavor. After this, prepare it by adding ginger-garlic paste, turmeric, red chilli, coriander and tomato. When the oil starts separating, add the fried brinjals and cook well with the spices on low flame. Finally add a little vinegar or mango powder and serve.

The desert prepared for Putin was also a royal one. Almond halwa, saffron pistachio kulfi and fresh fruits were served for them as sweets. It is very easy to make almond halwa, to make it, soak almonds in water for a few hours or overnight, remove their peel and then grind them coarsely to prepare a paste. Heat ghee in a pan and fry the almond paste on low flame while stirring continuously. When it starts smelling, add milk or water to it and cook. After this, add sugar or sugar and cook until the ghee starts separating from the sides. Add saffron threads or cardamom powder to it for taste and aroma and serve it hot.
