Eggplant Manchurian Recipe: Most of the people eat the vegetable made from brinjal with fuss, in many houses brinjal is not available because most of the people in the house do not eat it. But this Brinjal Manchurian is so tasty and crispy that everyone likes it. The taste of Brinjal Manchurian is so different from the normal vegetable, that you can prepare it and eat it every week and children will also like it. Brinjal strips in spicy gravy of Schezwan and soy sauce, it seems that it is something else than brinjal. And the most important thing is that it is ready in 15 minutes!
Ingredients
For brinjal fry-
- Large brinjal – 1
- Cornflour – 4 tbsp
- Flour – 2 tbsp
- salt to taste
- Black pepper – ½ tsp
- Red chilli – ½ tsp
- Oil – for frying
For Manchurian Sauce:
- Oil – 1 tbsp
- Ginger-garlic – 1 tbsp (crushed)
- Green chilli – 1
- Onion – 1 small (chopped)
- Capsicum – ½ cup (cubes)
- Soya sauce – 1 tbsp
- Tomato Sauce – 1 tbsp
- Chilli sauce/schezwan – 1 tbsp
- Vinegar – 1 tsp
- salt to taste
- Black pepper – ½ tsp
- Water – ¼ cup
- Cornflour Slurry – 2 tsp cornflour + 2 tbsp water
Recipe in 15 minutes (Quick Recipe)
1. Cut and coat the brinjal
Cut the brinjal into cubes. Mix cornflour, flour, salt and pepper in a bowl and coat the brinjals well.
2. Crispy fry the brinjal
Fry the brinjal cubes in hot oil until golden and crispy. Take them out immediately on kitchen paper.
3. Prepare the sauce
Heat some oil in a pan. Add ginger-garlic, green chilli and fry. Then add onion and capsicum and cook on high flame for 1 minute.
4. Give Manchurian flavor
Add soy sauce, chili sauce, tomato sauce and vinegar. Add some water and let it boil.
5. Thicken the gravy
Add cornflour slurry and cook the sauce for 30 seconds until it thickens.
6. Stir Fried Eggplant
Lastly add crispy fried brinjal and toss it in the sauce. Manchurian ready in 30–40 seconds!

Cooking Mistakes to Avoid
1. Do not cut the brinjal thinly
Too thin slices break quickly and get mixed with the sauce and become soggy.
2. Do not apply salt before frying brinjal.
Applying salt first makes the brinjal lose water and does not become crispy.
3. Do not keep the sauce too thin
Thin sauce makes the brinjals soft and taste bad, keep the sauce a little thick.
4. Do not cook brinjal in sauce for too long
Toss only for 30–40 seconds, otherwise the brinjal coating will lose its crunch.
5. Do not stir-fry on low flame
The flavor of Manchurian comes only on high flame. Therefore, do not make the mistake of cooking it on low flame.
