Things like dal-baati, churma are quite popular among the people, but there are some traditional dishes here which are known only to the local people. Talking about winter food, Indian people love to eat sweets in cold weather. In Marwari homes, special ‘Phalodi’ is made during the winter season, in which ingredients like dry fruits, gum, dry ginger are used. This is a sweet dessert, which has a little crunchy and a little spicy taste. Along with keeping the body warm in winter, it will also provide nutrition.
Phalodi is a special sweet dish of Marwari people, which is also known as ‘Magadh’. It is made there to give as a gift to the guests during special occasions like festivals or weddings, but Phalodi is especially prepared and eaten in winters, because it is rich in nutrition along with taste. The sweetness in it is less as compared to other desserts and its coarse texture looks amazing. So let’s see the recipe.
These ingredients will be required
You will need three-fourth cup wheat flour, a little more than half cup desi ghee, one-fourth cup i.e. 1 tablespoon gum, half cup almonds i.e. 20 to 25, 2 teaspoons black pepper (coarsely ground), dry ginger powder 2 teaspoons, powdered sugar 5-6 tablespoons or as per taste, you can take some nuts and dry fruits for garnish like pistachios, raisins. Now let us see the step by step method of making Phalodi.

- First of all, heat about half a cup of desi ghee in a thick bottomed pan and keep the rest aside, then add all the flour in it and fry on low flame for 15-17 minutes until it becomes golden and aromatic. During this time, keep stirring the flour continuously.
- Now add remaining desi ghee in another kadai or pan and let it heat. After this, fry the gum in it. When the gum swells well, take it out separately in a plate with a mesh ladle. After it cools down, crush the gum lightly.
- Now add crushed gum to the roasted flour and fry it while stirring again for some time. If you want, you can also fry the gum directly by adding it to the mixture of ghee and flour, but it has to be crushed later.
- After this, cut the almonds or crush them with something so that they become small pieces. Add it to the prepared mixture. Now turn off the gas at this stage. Apart from almonds, also chop other dry fruits and nuts and keep them aside.
- After removing the pan from the gas, add 2 teaspoons of black pepper and dry ginger powder to this mixture and mix well. When the mixture cools down a bit i.e. remains lukewarm, add powdered sugar to it or you can also add jaggery.
- After adding all the things, if you feel that the mixture is too dry then heat some more desi ghee and add it to it. After this, put this mixture in a tray or steel box and level it with the help of a ladle. Garnish it with remaining chopped dry fruits and nuts.
- Instead of freezing this mixture, you can also make laddus. You can also use silver work for garnishing and serve it to your family as well as guests.
