The name of this drink made from milk and gram flour is ‘Besan Ka Sudka’. It can be said that this is a kind of molasses drink. Which also has the crunch of nuts, mild spiciness of black pepper and also sweetness. Actually, this drink of gram flour and milk is mainly made in Punjab and is also drunk in many parts of North India to get relief from cold and cough.
What are the ingredients required?
1 tsp ghee, 2 tsp, 2 cups milk, half tsp turmeric and half tsp dry ginger powder, 1.5 tbsp jaggery powder, some dry fruits like almonds, pistachios, walnuts, cashews, apart from this you can take saffron which is optional. Now let us know step by step how to make gram flour sudka.
Besan Sudka Recipe
First of all, heat a wok or thick bottom pan, but keep the flame low. Add desi ghee in it and then add gram flour and fry while stirring well. When it starts smelling and the color starts changing slightly, add black pepper powder, half teaspoon turmeric, half teaspoon dry ginger powder. After this add milk in it and cook till it boils for 2 to 3 times. After this add chopped almonds, pistachio slivers, crushed walnuts and cashews. After this turn off the gas.
Give the finishing touch to the drink
In another pan, melt jaggery with two spoons of water and make it like syrup and then add it to boiled milk. As much sweetness as you like. You can also reduce jaggery accordingly. Your gram flour and milk sudka is ready to taste. Serve it hot. If desired, garnish with chopped pistachios and serve.
