Beetroot and Carrot Kanji
Ingredients To make this Kanji, you will need 3 black carrots, 1 beetroot, 2 teaspoons black or yellow ground mustard, 1 teaspoon black salt, ½ teaspoon plain salt, ½ to 1 teaspoon red chili powder, water, mustard seeds. You can use all these ingredients as per your need and taste.
Recipe – Wash black carrots and beetroot thoroughly. After this, cut it lengthwise. Now take a big glass jar. Keep in mind not to use steel or plastic jars. Now add black carrot and beetroot pieces into it. Add ground mustard, black salt, plain salt and black pepper in the jar and mix well. Now add clean water into it. Leave some space free on top of the jar. Cover the jar lightly with a lid and keep it in the sun for 2 to 2 days. Mix it once daily with a spoon or by shaking the jar. So that all the ingredients mix well.
If it is getting sunlight, then this Kanji will be ready in 2 to 3 days. In very cold weather it may take 4 to 5 days. The water will turn sour and its color will appear dark pink and purple. The taste will be slightly sour and spicy. Now filter the kanji and pour it into a glass and drink it after it cools down. You can also eat pieces of carrot and beetroot, which will taste delicious.
