Carrot Pickle
Eating carrots is very much liked in winter. People make vegetables out of it. Apart from this, halwa, juice and pickle are made from it. Apart from this, many people also like to eat carrot pickle in winter. Fermontel pickles contain probiotics, which are considered good for digestion. It is made by mixing many spices. As soon as winter arrives, most people make pickles of cabbage and carrots and store them. Because it is very tasty. But many times, even after trying a lot, the taste of the pickle does not come out right like the pickles put by the hands of our grandmothers. Carrot Pickle Recipe
Ingredients for making pickle
500 grams carrots, 2 teaspoons coriander seeds, 1 teaspoon fenugreek seeds, 2 teaspoons mustard seeds, 2 teaspoons fennel, 2 teaspoons cumin, 1/4 cup mustard oil, 1 teaspoon nigella seeds, asafoetida, 2 teaspoons red chili powder, 1 teaspoon turmeric powder, 1 teaspoon mango powder, 1 teaspoon vinegar and salt as per requirement are used to make carrot pickle.
Method of preparation
First of all, take carrots, peel them and cut them into thin slices. Put it in water, clean it thoroughly and filter it. Put it in a cloth and dry it. Now keep the pan on the gas. Add fenugreek, coriander, mustard seeds, cumin and fennel and fry till it crackles. Now cool it and grind it coarsely to make powder. Now heat oil in a pan and add nigella, asafoetida and carrot and mix well for 2 minutes. Now add red chilli powder, turmeric powder, coarsely ground masala, garam masala and mix it well. Now add mango powder, salt and lemon juice and mix it. Take delicious carrot pickle is ready.

another way
Wash, peel the carrots, ginger and radish and wipe them with a handkerchief. Cut into fine pieces. Wash and wipe green chillies, remove the stalk, make a slit from the middle and cut it into 2 pieces. Dry roast fennel, coriander seeds, cumin seeds, mustard seeds, yellow mustard and fenugreek seeds on low flame for one minute and grind them coarsely once they cool down.

Take out the carrots and radishes in a large bowl and add the roasted ground spices along with all the spices like salt, garam masala, red chili powder, nigella seeds and turmeric powder. Mix well. Heat mustard oil and when it cools down a bit, add mustard oil to the pickle and mix everything well. Now add vinegar and mix well. Tasty carrot and radish pickle is ready.
