Easy Papad Sabji Recipe: Sometimes a day comes when you neither feel like making dal nor cutting vegetables. In such a situation, if something is prepared quickly and tasty, then it becomes fun. Rajasthan’s traditional recipe papad ki sabzi is one such dish which is prepared in 10 minutes and tastes so wonderful that neither any other vegetable nor dal is required with it. To make this, there is no hassle of cutting vegetables, no need of soaking pulses, this wonderful dish is made with just papad, spices and curd. Let us know the easy way to make it and some important tips which will double its taste.
Ingredients
- (for 2 people)
- Papad – 3 to 4 (roasted or fried, as per your choice)
- Curd- 1 cup (well beaten)
- Gram flour- 1 tsp
- Oil- 2 tbsp
- Mustard – ½ tsp
- Cumin – ½ tsp
- Asafoetida – a pinch
- Turmeric powder- ¼ tsp
- Red chilli powder – ½ tsp
- Coriander powder- 1 tsp
- salt to taste
- Green Coriander – for decoration
How to make papad curry
prepare masala
Heat oil in a pan and add cumin, mustard and asafoetida. When it starts crackling, add garlic and finely chopped onions and cook.

Add red chilli powder, salt, turmeric, coriander and garam masala in a bowl and make a paste by adding water.
add tomatoes
When onion and garlic turn golden, cook until tomatoes melt. When the tomatoes are cooked, add the spices soaked in water and mix well.

Cook this mixture by adding water on low flame for 4-5 minutes until it becomes slightly thick.

add papad
- Now add broken roasted or lightly fried papad into it.
- Cook on low flame for 1–2 minutes so that the papad dissolves well in the spices.
serve up
Add green coriander on top and serve with hot roti or chapatti.

cooking tips
- If the papad is very salty, avoid adding salt.
- Do not cook the papad for too long, otherwise it will melt completely and the vegetable will become thick.
- If you want, you can increase the taste by adding some Kasuri Methi or curd to it.
- Fried papad tastes richer, but if you want to eat lighter then roasted papad will be better.
