Ingredients of Dhansak Masala

  • salt as per taste
  • 1 teaspoon cumin
  • 2 teaspoons dried coriander
  • half teaspoon fennel
  • 4-5 whole Kashmiri chillies
  • 4-5 cloves
  • half teaspoon black pepper
  • 2 large cardamoms
  • 5-6 small cardamoms
  • 1 quarter broken nutmeg
  • 1 whole mace
  • 3 medium size bay leaves
  • one and a half inch cinnamon stick

How to make this masala?

  • To make Dhansak masala, put the pan on medium flame and first add salt in it.
  • Now add cumin, coriander, fennel, Kashmiri red chilli in the same pan and roast it lightly while tossing.
  • Now you have to add aromatic spices to it. Like add cloves, black pepper, big cardamom, small cardamom, nutmeg and mace.
  • At this stage you also have to add cinnamon and bay leaves to it. Toss it again and fry it a little more.
  • Now after cooling all these spices, grind them into powder and store them in an airtight container and use them in food.
