How to make payasam?
- If you want to make payasam traditionally then it is best to make it on an earthen stove. First of all, put jaggery in the pan and melt it with some water. When it dissolves completely, remove it from the flame, cover it and keep it aside.
- The second step is to peel the banana and cut it into small pieces. Mash it with a fork, spoon or masher. It should become exactly like a paste.
- Now heat desi ghee in a pan and fry chopped nuts like almonds, walnuts, cashews and also fry raisins. Along with this, fry finely chopped coconut pieces in ghee and take them out.
- After all the dry fruits are ready, add mashed banana to the remaining ghee in the pan and fry it on low flame while stirring continuously. When it starts turning a little golden, add the previously prepared jaggery syrup to it.
- After adding jaggery to the banana, mix it well and then cover it and let it cook on very low flame. This will take at least 15 to 20 minutes. Both these things will create a caramel flavor.
- When the banana and jaggery syrup is cooked and ready, add coconut milk to it. Also add cardamom powder and cumin powder. Now cook it till it boils. Keep the flame low during this also, so that a thin layer will form on it.
- When payasam is ready, add roasted coconut pieces, cashew nuts, raisins, walnuts and almonds at the end. Save some nuts so that the payasam can be garnished while serving.
