To celebrate this festival, all the family members gather and worship Sun God and Chhathi Maiya with great pomp and show. During this time, the traditional dish Thekua is definitely prepared. It is considered a favorite and traditional offering of Chhathi Maiya and Sun God. Chhath puja is considered incomplete without Thekua. Correct ratio of ghee and flour in thekula
Whether you make thekua in small quantity or in large quantity during festivals, the ratio of flour and jaggery should be right in it. If you are using 2 cups of flour then add ¼ cup of ghee in it. You can also add ¼ cup of graded coconut to enhance the taste of thekua. Don’t forget to add fennel and cardamom powder. If you want, you can also use jaggery solution instead of sugar. By doing this thekua becomes tasty.

Rest the dough for 15 minutes.
After kneading the dough with water for 15 minutes, rest the dough for 15 minutes. By doing this the sugar will get time to dissolve and thekua will become delicious. After rolling the round dough without a mould, cut it with a steel glass. You can give leaf shape with the help of hand.

Never use high flame while frying thekua. Frying thekua in low flame will make it crunchy. Thekua burns very quickly in high flame. This happens because of the sugar or jaggery present in it. When the Thekua is taken out from the bottom, it will be soft but will become crunchy once it cools down.
