A Love Story That Started with Biryani
Back in 2009, Takamasa Osawa was on holiday in Coimbatore, Tamil Nadu. He had always loved rice dishes since he was a kid, but when he tasted biryani for the first time in India, it was a game-changer. The aroma of the spices, the fragrance of the basmati rice, and that mind-blowing taste completely hooked him. From that day on, his love for biryani made him hunt for it in every corner of India he visited.

So Good, He Missed His Flight!
Osawa’s craze for biryani was on another level. Once, he was sitting in a local hotel in Delhi, enjoying a plate of biryani. He got so lost in its taste that he completely forgot about the world around him. Time flew by, and before he knew it, he had missed his flight back home! This crazy love for the dish pushed him to travel all over India to learn its secrets. He went to Hyderabad, Lucknow, and Kolkata, and even learned the Lahore style of making biryani firsthand.
In 2021, Osawa returned to Tokyo and opened a tiny, 10-seater restaurant called ‘Biryani Osawa’. He follows a centuries-old Japanese tradition called ‘Do’. It’s a philosophy where you pick one art form—be it a tea ceremony or cooking—and spend your entire life perfecting it. Osawa chose biryani. “My real gurus are not the big chefs, but the common cooks on the street who make biryani with so much dedication. My only job is to think about how I can make today’s biryani better than yesterday’s,” Osawa says.

The Real Test: Indian Customers!
When he first introduced biryani in Japan, people were confused. They would ask, “What’s the difference between this and fried rice?” or “You’ve given us rice, but where is the curry?” But for Osawa, the real challenge was serving his Indian customers. “For Indians, biryani isn’t just food; it’s an emotion. They know the real taste. So, serving them is like a daily test for me,” he explains. If an Indian customer leaves some biryani on their plate, he doesn’t get upset. Instead, he wonders where he went wrong and how he can improve the recipe for next time.
Osawa has created his own special biryani by blending different styles. He combines the perfection of Hyderabadi dum biryani, the aromatic spices of Kolkata, the magic of cooking basmati rice just right, the Baluchistani method for making meat super soft, and the flavours of Tamil Nadu. Born in another country, Osawa has dived deep into Indian cuisine and is making India proud in Japan with his hard work and passion. His success story is truly an inspiration for everyone!
