Sama chawal ke parathe recipe: A delicious fasting option

New Delhi: The holy month of Sawan has begun, and many people keep fast during this time.   During fasting days, finding nutritious yet satisfying meal options can be a challenge. Sama ke Chawal ke Parathe (barnyard millet flatbreads) offer the perfect balance of taste, health, and tradition. Sama, also known as vrat ke chawal, is a gluten-free millet that resembles rice in texture but is much lighter on the stomach. It is rich in fibre, protein, and essential minerals, making it an ideal ingredient for fasting meals.

These parathas are typically made by combining sama flour with boiled potatoes, mild spices, and herbs to form a dough. Since the flour lacks gluten, binding can be tricky; however, the addition of potatoes helps create a smooth and pliable dough. When cooked on a hot griddle with ghee, these parathas become crisp on the outside and soft on the inside, making them a comforting and wholesome option.

How to make sama chawal ke parathe?

Here’s a simple and delicious recipe for Sama ke Chawal ke Parathe, perfect for fasting days:

Ingredients:

  • Sama ke chawal – 1 cup or as per requirement

  • Boiled potatoes – 2 medium, mashed

  • Sendha namak (rock salt) – to taste

  • Green chillies – 1-2, finely chopped (optional)

  • Coriander leaves – 1 tbsp, finely chopped

  • Cumin powder – ½ tsp

  • Black pepper powder – ¼ tsp

  • Ghee or oil – for cooking

Instructions:

  1. Prepare dough
In a mixer grinder, grind Sama chawal to make flour. Then take a large bowl, mix sama flour, mashed potatoes, green chillies, coriander leaves, cumin powder, black pepper, and sendha namak. Gradually add a little warm water if needed and knead into a soft dough. To make a soft dough, add potatoes as they help to bind the dough.

  2. Rest dough
Keep the dough for rest for about 5–10 minutes and cover it with a damp cloth.

  3. Roll parathas
After letting it rest for a while, take a small portion of dough and place it between two plastic sheets or butter paper. Gently roll it to make a paratha using a rolling pin. It may break if rolled like regular dough; hence, plastic is helpful.

  4. Cook parathas
Heat a non-stick tawa or griddle. Place the paratha and cook it on medium heat. Drizzle ghee or oil around it. Cook both sides until it turns golden brown and crisp.

  5. Serve hot
Serve sama chawal k parathe with curd, peanut chutney, or aloo sabzi.

Sama ke chawal ke parathe are not only delicious but also keep you feeling full longer during fasts. Enjoy them with vrat-friendly curd, aloo sabzi, or coconut chutney for a complete and satisfying meal. Whether you’re observing a fast or just looking for a light meal, this dish is a must-try.
