Ingredients to make Mango Pulao
- 1 cup basmati rice
- 1½ cups ripe mango pieces
- 2 tbsp mango pulp
- 2 tbsp ghee
- 10 cashews
- 10 almonds (thinly chopped)
- 1 tablespoon raisins
- 3 green cardamoms
- A few threads of saffron (soaked in lukewarm milk)
- 2 tbsp jaggery powder or sugar (optional)
- 2 cups water
Mango Pulao Recipe
- First of all, wash the Basmati rice thoroughly and soak it for 20 minutes. After this, cook the rice so that the grains remain soft and separate. Let the cooked rice cool down a bit.
- Now heat ghee in a pan and add cashews, almonds and raisins and fry till they become light golden. Now add milk with green cardamom and saffron in the pan. Cook while stirring for a few seconds.
- After this add mango pulp and jaggery powder or sugar. Cook on low flame for 1-2 minutes. Now add cooked rice and mango pieces. Mix slowly so that the rice grains do not break. Garnish by adding roasted nuts on top.

If you are making Mango Pulao for the first time, it is very important to keep some tips in mind. For this you can take mango varieties like Alphonso, Kesar and Banganapalli. This variety of mango is considered best for this recipe because it has better taste and aroma. Always use good quality Basmati rice, it makes the grains of Pulao long and lush. Also, do not use too soft mangoes, as they can mix with the rice and make the pulao soggy and sticky.
