Ingredients
- 1 medium beetroot, boiled or steamed
- 1 to 1¼ cups fresh curd (preferably chilled)
- ½ teaspoon roasted cumin powder
- A pinch of black salt
- ¼ teaspoon regular salt (adjust to taste)
- 1 green chilli, finely chopped (optional for heat)
- 1 tablespoon fresh coriander, finely chopped
- 1 teaspoon sugar or honey (optional, enhances beetroot’s natural sweetness)
- 1 teaspoon ghee (optional, for seasoning)
- ½ teaspoon mustard seeds (optional)
- 4–5 curry leaves (optional)
How to make:
- Boil beetroot until it becomes tender. Once cooled, peel it and grate it finely.
- Take out the chilled curd and add in a bowl to whisk well.
- Mix roasted cumin powder, regular salt and a pinch of black salt.
- Fold the grated beetroot gently into the curd.
- Add chopped green chillies, some honey and a teaspoon of ghee for aroma.
- Temper raita with mustard seeds and curry leaves for flavours.
