As soon as summer starts, many such traditional dishes start being prepared in Indian homes which help in keeping our body cool internally. One such dish is Ragi Ambali which is very much liked during summers. It is made especially in Karnataka. It is very nutritious, because Ragi i.e. finger millet is rich in many nutrients. This dish is made by fermenting and also buttermilk is used in it, hence it is also beneficial for your gut. In this article we will see the recipe of Ragi Ambali.

Ragi Ambali is a kind of drink, to make which the ragi flour is first cooked and then fermented and prepared with buttermilk. Light spices and herbs are also added to it which make it even healthier. It is also considered helpful in preventing heatstroke, because onion and green chillies are also added to it. So let’s know the recipe.

Note the ingredients

1 cup ragi, one medium sized onion (chop finely). 3-4 green chillies (chop it finely/can take more or less as per taste), a little coriander (chopped), 8-10 curry leaves (chopped), salt as per taste, roasted cumin powder 1 tsp. To cook ragi, you will need 3 to 3.5 cups of water.

How to make Ragi Ambali?

  • First of all, mix ragi flour well with 2 cups of water in a big bowl. Keep in mind that there should not be any lumps in it.
  • Now put a pan on flame and add 1 to 1.5 cups of water in it. After this, add dissolved ragi flour to it also.
  • This mixture has to be cooked while whisking continuously. When it becomes slightly thick i.e. creamy texture, turn off the gas.
  • Now take water in an earthen vessel and put the prepared ragi mixture in it. Cover it and leave it to ferment overnight.
  • In the morning, mash the ragi well with your hands and dissolve it in the same water.
  • In this you have to add butter milk. If you want, you can beat the curd and add it to it. It has to be churned well.
  • Now add finely chopped onion, green chilli, curry leaves and green coriander. This creates a blend of taste and nutrients.
  • Add salt, roasted cumin powder in it and mix well. Garnish with chopped coriander leaves and serve.
