Some like Punjabi Kadhi, while others like the taste of Gujarati or Rajasthani Kadhi. The sour-spicy taste of Kadhi tastes wonderful with rice or roti. If you are also fond of eating kadhi, then you can further enhance the taste of your food by making these three special types of kadhi at home.

Punjabi Pakora Kadhi

Material

1 cup curd, 2 tbsp gram flour, 1 cup water, salt to taste, ½ tsp turmeric, 1 tsp red chilli powder, 1 tsp coriander powder, 1 onion (chopped), green chilli, oil. For pakora: 1 cup gram flour, salt, red chilli, a little water and oil.

Method

First of all, to make pakodas, prepare a thick batter by adding salt, chilli and water in gram flour and fry small pakodas in hot oil. Now beat curd and gram flour well in a vessel and add water and spices to it. Heat some oil in a pan and fry cumin and onion, then add curd-gram flour mixture and cook on low flame. When the curry starts boiling, add pakodas to it and cook for 10-15 minutes. Delicious Punjabi Kadhi is ready.

Gujarati Sweet Kadhi

Material

1 cup sweet and sour curd, 2 spoons gram flour, 2 cups water, 1 spoon jaggery, salt as per taste, ½ spoon turmeric, curry leaves, mustard seeds, cumin, dry red chilli, 1 spoon ghee.

Method

First of all, beat curd, gram flour and water well so that there are no lumps in it. Now add salt, turmeric and some jaggery to it. Heat ghee in a pan and add mustard seeds, cumin seeds, curry leaves and dry red chillies and temper it. After this, pour the curd-gram flour mixture in the pan and cook on medium flame while stirring continuously. The curry will be cooked thoroughly in 10-12 minutes. This kadhi is mildly sweet and very tasty.

Rajasthani Kadhi

Ingredients: 1 cup curd, 3 teaspoons gram flour, 2 cups water, ½ teaspoon turmeric, 1 teaspoon red chili powder, salt to taste, 1 teaspoon cumin, 2 dry red chilies, a little asafoetida and 2 teaspoons ghee.

Method

Add curd and gram flour in a bowl and beat it well, then add water and spices to it. Now heat ghee in a pan and add cumin, asafoetida and dry red chillies to it. After this, add curd-gram flour mixture and cook on low flame. It is necessary to boil Rajasthani Kadhi for some time, which increases its taste and thickness. Serve it with hot rice or millet roti.
