Chana Ghugni

Ingredients required – 1 cup white gram, 1 potato, 1 finely chopped onion, 1 tomato, 1 teaspoon ginger and garlic paste, 1 to 2 finely chopped green chillies, oil, turmeric powder, red chilli powder, coriander powder, zari, garam masala, salt, lemon juice, green coriander, finely chopped onion and bhujia or sev.

To make Chana Ghugni, the most important thing is to soak white gram overnight. Put gram, salt and water in a pressure cooker and boil till it whistles. Strain the boiled gram and keep some remaining water for gravy. Now heat oil in a pan. Add cumin seeds in it and crackle it. Add onion and fry until golden. Now add ginger, garlic paste and green chillies and fry. After this add tomatoes and cook till they become soft.

Now add turmeric, red chilli, coriander powder and salt and fry for 1 to 2 minutes. Add boiled gram and water in the pan. Mix them well and boil on low flame for 7 to 10 minutes so that the spices and gram dissolve well. Potatoes can also be added to enhance the taste. Now add garam masala in it and cook. Now add sleep juice, finely chopped onion, green coriander, turmeric, sev or bhujia and serve it. You can eat this with puri, paratha or roti.

Essential Ingredients – 2 cups rice flour, 2 cups water, ½ tsp salt, 1 tsp oil, 1 cup chana dal, ginger, garlic, finely chopped green chillies, ½ tsp cumin, ½ tsp celery, ½ tsp red chilli powder, ½ tsp turmeric powder, salt as per taste, green coriander

Method of preparation

To make this, first of all soak chana dal for 2 to 3 hours. Filter the lentils and grind them coarsely in the mixer. Heat 1 teaspoon oil in a pan. Now add cumin and celery and when it crackles, add dal. Now add ginger, garlic, green chilli, red chilli powder, turmeric powder and salt. Fry it on low flame for 6 to 8 minutes. After this, turn off the gas and let it cool down. Now add water, salt and a little oil in a pan and boil it. Add rice flour to boiling water, mix it and cover it and leave it for 3 to 4 minutes.

Now turn off the gas and let it cool down a little. Wet your hands and knead the dough softly. Take a small ball of dough and knead it like a round or gujiya. Add 1 to 2 spoons of lentil paste in the middle. Close the edges well so that it does not open while boiling. Boil water in a pan and add pitha in it. Cook for 10 to 12 minutes. After this, take it out and filter it or if you want, you can also steam it. Eat it with desi ghee, pickle or green chutney.
