Many different types of spices are used to make it. Which makes it tasty as well as healthy. Making pickles is a common thing in every house during the winter season. But even after using one spice, the taste of pickle is different in every house.
During the winter season, pickles made with hard work often start spoiling within a few days or they do not taste right, this could be due to some mistakes made while making the pickles. If things start getting worse after a few days of pickling, moisture may be the reason behind it. When vegetables do not dry completely, the water present in them causes mold in the pickles. Therefore, dry the vegetables completely before adding pickle. Apart from this, do not use wet or moist spoons, close the pickle vessel properly and due to lack of oil the pickle may also become moist.

Adding raw spices can also spoil the pickle because they contain moisture and rawness. First fry the pickle spices like fenugreek, mustard, fennel, turmeric, red chilli, celery etc. lightly so that the moisture gets removed from them. After this grind it coarsely. Keep in mind that the spices should not burn while frying. Mix the spices with vegetables only after they cool down.

not exposed to sunlight or stored incorrectly
After the vegetable is dried and pickled, it is kept in the sun so that it can be prepared properly. Due to this, the flavor of the spices gets absorbed well in the pickle and the chances of getting moldy are reduced. Initially keep the pickle in sunlight for 3 to 4 hours daily for 4 to 5 days. Keep shaking the jar lightly so that the spices and oil mix properly.

To maintain the pickle properly, it is very important for the vessel to be clean and dry. Often people put pickles in a vessel with little moisture, but due to this it may become mouldy. Kany or ceramic jars i.e. Barani are considered a good option for storing and making pickles. Avoid putting pickles in plastic containers, as they can cause odor or bacteria can grow quickly.

not heating the oil properly
If the oil is not heated properly while making pickles, then the chances of bacteria and mold growing in the pickles increases. Heat the mustard oil until it starts smoking. Then after it cools completely, add it to pickle or add spices to it. If the pickle remains completely covered in oil, it will not spoil even for years.
