Actually, behind this, some mistakes made while making the roti can happen and if small things are kept in mind while packing the tiffin, then the roti can be cooked even in winters. After several hours it remains as soft as freshly made.
Indian thali is incomplete without roti and in winter people make roti made of many different types of grains like ragi, jowar, bajra, maize. All these flours are gluten free, hence their rotis become hard very quickly, whereas due to cold, sometimes wheat rotis also start becoming hard. If you also open the tiffin at lunch time and the roti becomes dry, then with the help of some tips you can keep it soft.
Be careful while kneading the dough
To ensure that the roti remains soft for a long time, it is important to knead the dough properly. The first tip is that the dough should be kneaded until it starts separating from the vessel. Apart from this, after kneading the dough, it should be kept covered for some time. This will make your rotis rise well, which will keep them soft.
Add these things to the flour
The roti remains soft for a long time. For this, while kneading the dough in winter, lukewarm water should be used and a little salt can be added. Apart from this, you can add a little milk or curd in the flour. Even if you add fresh milk cream to the dough and knead it, the rotis remain soft for a long time.
The method of rolling bread should be correct.
Often rotis become hard only when you have made a mistake in rolling the roti. The roti should not be rolled too thick or thin. Similarly, the roti should not be too thick from the middle or from the edges. If you roll it evenly from all sides, the roti will rise well and remain soft. While rolling rotis, one should not use too much dry flour.
