Recipe to make soft and fluffy idli

Material

2 cups idli rice

1 cup urad dal

1 tsp fenugreek seeds

salt as per taste

A little oil (to grease the mold)

How to make (step by step)

First of all, wash the rice thoroughly and soak it for 4 to 5 hours. Similarly, soak urad dal and fenugreek seeds in a separate vessel for 4 to 5 hours. Now put the soaked lentils in the mixer and make a smooth and slightly swollen paste by adding water little by little. After this, grind the rice a little coarsely.

Now mix the dal and rice paste well in a big vessel. Proper fermentation of the batter and proper beating of the dal makes the idli soft and fluffy.

Add salt as per taste and cover the batter and keep it in a warm place for 8 to 10 hours to ferment. When the batter rises slightly, apply some oil in the idli mold and fill the batter in it.

Place the idli stand in a steamer or cooker and steam it for 10 to 12 minutes. After cooking, let the idli cool for a few minutes and then take it out with the help of a spoon. Serve hot, soft and spongy idli with sambar and coconut chutney.
