Green Chilli Pickle: Everyone likes spicy and sour food in cold weather. Spicy eaters are crazy about chilli pickles. Eating hot roti and rice with chilli pickle gives heavenly pleasure. But some people feel that making it is a very difficult task. So we are going to tell you a recipe which you can prepare in 10 minutes. There will be no need to dry the chillies even in the sun. So let us tell you the recipe.
Ingredients for making green chilli pickle
- 500 grams green chilli
- 2 teaspoons fennel
- 1 teaspoon fenugreek seeds
- 1/2 teaspoon black pepper
- 2 cups mustard oil
- 1 tsp turmeric
- 1 teaspoon Kashmiri red chilli
- 2 tsp dry mango powder
- A pinch of celery and nigella seeds
- salt as per taste

prepare chili
First of all, wash the green chillies thoroughly and dry them. Remove the stalk and cut lengthwise or into small pieces. If desired, cut with scissors so that chili juice does not get on your hands.
fry spices
Lightly fry fennel, fenugreek and black pepper in a pan. Fry it on low flame and when the aroma starts coming, turn off the gas. Grind the spices after cooling them. Be careful not to make fine powder of the spices.

heat the oil
Heat mustard oil in the same pan until smoke comes out. Then turn off the gas and let it become lukewarm.
mix pickles
In a large bowl, add ground spices, turmeric, red chilli, dry mango powder, celery and nigella seeds. Add green chilli and salt to it. After this add lukewarm oil and mix well. Always store pickle in a dry glass bottle. Actually, this pickle is ready to eat immediately. But the taste can be further enhanced by keeping it in sunlight for 3-4 days.
