In winter, apart from carrots and cabbage, you can make pickles from other vegetables, many people like to eat pickles of peas in this season. At the same time, eating green gram is also very much liked in winter. In such a situation, you can make pickle from it.

Essential Ingredients
For this you will need 1 cup washed green gram, ½ cup mustard oil, salt as per taste, ½ teaspoon turmeric powder, 1 teaspoon red chili powder, 2 teaspoon pickle masala, 1 teaspoon ground mustard, ½ teaspoon whole fenugreek seeds, 1 to 2 pinches of asafoetida, 1 to 2 teaspoons lemon juice. To make pickle masala, take 1 teaspoon fennel, 1 teaspoon fenugreek seeds, 1 teaspoon mustard seeds, 1 ½ teaspoon coriander seeds.

Method of preparation
To make this, wash green gram thoroughly with water. Now keep it in light sunlight for 1 to 2 hours, so that it dries and the moisture present in it reduces. Now heat ½ cup mustard oil in a pan till it starts smoking. After this, turn off the gas and let the oil cool down a little. Now add asafoetida, turmeric, crushed fenugreek seeds and mustard seeds and mix well. Now add green gram in this oil. After this, add salt, red chilli powder and pickle masala and mix well. To make pickle masala, take fennel, fenugreek seeds, mustard seeds and whole coriander, roast them and grind them coarsely.
If you want to increase its sourness, you can add 1 to 2 spoons of lemon juice over it. Keep in mind that if you are adding lemon juice, then eat the pickle within 2 to 3 days because it affects its shelf life and the pickle gets spoiled. To store it, fill it in a clean glass bottle, taking care that there is no moisture in it. Keep in sunlight for 1 to 2 days so that the spices mix well. Now it can be eaten with parathas and other things.

Green gram vegetable and many other things can be made during the winter season. If your child does not like to eat green gram, then you can make pickle from it. Apart from this, you can make bread sandwich, green gram sprouts, green gram curry, green gram and potato curry.
